I loved eating fat when I was growing up but when my father died of heart disease when he was just forty years old, it opened my eyes. I decided I should be more careful with what I ate. I try not to eat pork or fat as much as I can.
I have a caretaker that has a high cholesterol and yet still eats chunks of fat from the lechon whenever we have a feast in our farm. He’s sixty seven years old and I am amazed that he doesn’t even have treatment for high cholesterol. I don’t know what he’s secret is.
